As the high levels of glucose in a diabetic’s body is abnormally high it becomes imperative to control it, hence, a diabetic’s diet must be appropriately regulated with the help of a dietician. A diabetic’s diet must consist of foods that :

Stewed Tomatoes and Okra

Ingredients:

8 large tomatoes
2 teaspoons of low-calorie margarine
2 onions (chopped)
1 green bell pepper (chopped)
16 ounces of okra (lady’s finger)
1 cup of frozen and thawed corn
2 teaspoons of sugar
½ cup of dry bread crumbs


Preparation:

Boil the tomatoes for one minute and then peel and chop them. Heat the margarine in a skillet and sauté the tomatoes, onions and bell pepper. Add the okra, corn and sugar. Simmer the mixture for 25 minutes. Lastly, add the bread crumbs.

Creamy Mashed Potatoes

Ingredients:
6 medium russet potatoes
3 tablespoons stick margarine
½ cup low-fat (1%) buttermilk

Preparation:

Simmer the potatoes in water in a saucepan for about 15 minutes. After the potatoes become tender enough drain the water and add margarine to the potatoes. When it’s melted mash the potatoes for 2-3 minutes till it becomes fluffy, then pour buttermilk and continue mashing the potatoes till you get a smooth texture.
